They did.. It's called Mass Effect. Just like KOTOR but with originality.
Or Bioshock, which was Mass Effect remade without the cyberpunk (Ooo steampunk!) and more Ayn Rand. It wasn't really original...just more people have read Star Wars.
I think Zero Punctuation did the best review of it (though I liked Bioshock).
I also liked KOTOR II better than the original...but it was made by someone else, and it was shoved out the door prematurely. So it's fantastic until the end, which is like saying it was a great date, wonderful foreplay...but then they were a minute man in bed. There's really no recovery from that.
The company who made it (too lazy to look it up) without obviously back talking to LucasArts...released all the dialogue from the real endings, and made it clear the ending wasn't what they intended and basically nicely said how shit got fucked up (and how in reality it wasn't totally their fault).
Which is all well and good, but people were left with an incomplete game (IMO, it had an ending and was 'complete' but it was like a sudden dive off a cliff).
So...yeah. Still great, but could have been a 'best of all time' had it been finished.
I think the 'best' of the genre is actually Vampire the Masquerade: Bloodlines. It released buggy as hell (and pretty much doomed Trioka as a result), but it's been cleaned up and is still patch maintained by a team of volunteers. (Since with Troika going under it's abandoned otherwise).
If you haven't played it, it's worth picking up...I think you can get it for $20 off STEAM and then patch it with the volunteer patches (links off GameBanshee among other places).
